The main roles (on pve endgame content) are dps, support. The support class are the tank (if needed) and healers most of the time but also covers important boons, and there is some dps that goes half dps half support too. But if you are starting playing the game, i'd suggest you don't bother too much with this.
Best all round class to pick So i’ve been playing willbender for most of the time, but feels like its very solo based and not feeling the FB too much. Staff #3 makes it very easy to tank and staff 5 destroys breakbars. Can also bring a shield offhand for even more blocks. To give you some insight, it's not raids but in KO CM, most pug groups have HFB "kite" the sniper hits (aka tank the hits) since it's better/easier to surviving those over HAM.
Tank guardians aren't used for the most part in pve. If you want a class that is good in support and healing then pick the druid. That one is right now the first pick since it has strong heals, strong dps buffs for your group and can mostly play with offensive berserker gear. 4. SinZerius.
Picking a class that can cover many boons, and or healing and have a good dps build is better then the hardest class as you will be able to take on multiple roles in a group setting. Daredevil is by far the easiest thief specialization. Infinite dodges and amazing cleave ftw. I'd say Mirage is easiest for Mesmer because infinite dodge builds in PvE is just memes all the way down but I haven't dug enough into PvE Virtuoso to counter your argument.
